Eggs Your Way with Home Fries
A hearty dish featuring classic Americana home fries with crunchy crusts and tender centers, served alongside eggs prepared to your preference and optional toast.

Ingredients
- 18 oz unpeeled floury potatoes cut into ½ inch chunks
- 0.5 cup water
- 2 tablespoons olive oil
- 0 to taste salt
- 1 tablespoon olive oil
- 1 medium onion chopped
- 0 olive oil
- 2 teaspoons red wine vinegar optional
- 2 oz butter
- 4 large eggs
- 0 toast to serve, optional
Instructions
- Put the potatoes in a single layer in a large frying pan over high heat. Add ½ cup of water, cover with a lid, and bring to a boil.
- Reduce the heat to medium and cook, covered, for 8 minutes or until the water has evaporated; the potatoes should be tender but firm.
- Drizzle 2 tablespoons of olive oil over the potatoes and season with salt. Gently toss to combine, scraping up any skin stuck to the pan. Increase the heat to medium-high and cook, without stirring, for 7 minutes until golden and crisp underneath.
- Turn the potatoes over, drizzle with another 1 tablespoon of olive oil and cook for a further 5 minutes until golden and crisp.
- Meanwhile, heat the remaining olive oil in a separate frying pan over medium heat. Add the onion and cook, stirring, for 5-7 minutes until soft.
- Add the onion to the potatoes, drizzle with vinegar if using, and gently toss to combine. Remove from heat.
- Melt butter in another large frying pan over medium heat. Crack in the eggs and cook for 3 minutes or until the yolks are just set.
- Divide the home fries among plates and add the fried eggs. Serve with toast if desired. Drizzle any remaining butter from the pan over the eggs.
