Blackened Cajun Chicken Alfredo

Ingredients

  • 4 pieces chicken breasts skinless, boneless
  • 3 tablespoons Cajun seasoning homemade or store-bought
  • 2 tablespoons canola oil
  • 2 tablespoons butter
  • 3 tablespoons butter
  • 4 cloves garlic minced
  • 2 cups heavy cream
  • 1.5 cups Parmesan cheese grated
  • 12 ounces Mafaldine noodles cooked al dente

Instructions

  1. Season chicken breasts liberally with Cajun blackened seasoning on all sides.
  2. Heat a skillet over medium-high heat and add canola oil. Place the seasoned chicken breasts in the skillet.
  3. Cook chicken until blackened and cooked through, about 6-8 minutes per side, adding butter toward the end of the cooking.
  4. Remove chicken from the skillet and let it rest. In the same skillet, melt more butter and sauté garlic until fragrant.
  5. Whisk in heavy cream and Parmesan cheese to the skillet, allowing the sauce to simmer and thicken.
  6. Cook Mafaldine noodles in a pot of salted boiling water until al dente, then drain.
  7. Toss the cooked pasta with the Alfredo sauce in the skillet until well coated.
  8. Slice the cooked chicken and arrange on top of the pasta to serve.
