Blackened Cajun Chicken Alfredo

Ingredients
- 4 pieces chicken breasts skinless, boneless
- 3 tablespoons Cajun seasoning homemade or store-bought
- 2 tablespoons canola oil
- 2 tablespoons butter
- 3 tablespoons butter
- 4 cloves garlic minced
- 2 cups heavy cream
- 1.5 cups Parmesan cheese grated
- 12 ounces Mafaldine noodles cooked al dente
Instructions
- Season chicken breasts liberally with Cajun blackened seasoning on all sides.
- Heat a skillet over medium-high heat and add canola oil. Place the seasoned chicken breasts in the skillet.
- Cook chicken until blackened and cooked through, about 6-8 minutes per side, adding butter toward the end of the cooking.
- Remove chicken from the skillet and let it rest. In the same skillet, melt more butter and sauté garlic until fragrant.
- Whisk in heavy cream and Parmesan cheese to the skillet, allowing the sauce to simmer and thicken.
- Cook Mafaldine noodles in a pot of salted boiling water until al dente, then drain.
- Toss the cooked pasta with the Alfredo sauce in the skillet until well coated.
- Slice the cooked chicken and arrange on top of the pasta to serve.
