Gooey Pecan Pie Cobbler

Ingredients

  • 4 tablespoons unsalted butter
  • 0.5 cup all-purpose flour
  • 0.5 cup whole wheat flour
  • 0.75 cup light brown sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground cinnamon
  • 0.5 cup 2% milk
  • 2 tablespoons dark rum
  • 1 teaspoon pure vanilla extract
  • 0.67 cup packed brown sugar
  • 1 cup chopped pecans
  • 1.5 cups very hot water

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt 4 tablespoons of unsalted butter in an 8x8 inch baking dish.
  3. In a bowl, mix ½ cup of all-purpose flour, ½ cup of whole wheat or all-purpose flour, ¾ cup of packed light brown sugar, 1 ½ teaspoons of baking powder, ½ teaspoon of kosher salt, and ½ teaspoon of ground cinnamon.
  4. Stir in ½ cup of 2% milk, 2 tablespoons of dark rum or vanilla extract with additional milk, and 1 teaspoon of pure vanilla extract into the dry ingredients to make the batter.
  5. Dollop the batter over the melted butter in the dish. Do not stir.
  6. Sprinkle ⅔ cup of packed brown sugar and 1 cup of chopped pecans evenly over the batter.
  7. Pour 1 ½ cups of very hot water evenly over the surface. Do not stir. Bake for 30-40 minutes until golden brown.
  8. Cool slightly before serving. Serve warm with vanilla ice cream.
