Gooey Pecan Pie Cobbler

Ingredients
- 4 tablespoons unsalted butter
- 0.5 cup all-purpose flour
- 0.5 cup whole wheat flour
- 0.75 cup light brown sugar
- 1.5 teaspoons baking powder
- 0.5 teaspoon kosher salt
- 0.5 teaspoon ground cinnamon
- 0.5 cup 2% milk
- 2 tablespoons dark rum
- 1 teaspoon pure vanilla extract
- 0.67 cup packed brown sugar
- 1 cup chopped pecans
- 1.5 cups very hot water
Instructions
- Preheat the oven to 350°F (175°C).
- Melt 4 tablespoons of unsalted butter in an 8x8 inch baking dish.
- In a bowl, mix ½ cup of all-purpose flour, ½ cup of whole wheat or all-purpose flour, ¾ cup of packed light brown sugar, 1 ½ teaspoons of baking powder, ½ teaspoon of kosher salt, and ½ teaspoon of ground cinnamon.
- Stir in ½ cup of 2% milk, 2 tablespoons of dark rum or vanilla extract with additional milk, and 1 teaspoon of pure vanilla extract into the dry ingredients to make the batter.
- Dollop the batter over the melted butter in the dish. Do not stir.
- Sprinkle ⅔ cup of packed brown sugar and 1 cup of chopped pecans evenly over the batter.
- Pour 1 ½ cups of very hot water evenly over the surface. Do not stir. Bake for 30-40 minutes until golden brown.
- Cool slightly before serving. Serve warm with vanilla ice cream.
