Beef Bacon Carbonara with Peas

Ingredients

  • 2 eggs whole
  • 2 egg yolks
  • 1 cup Parmesan cheese grated
  • 0.5 teaspoon black pepper freshly ground
  • 0.5 pound beef bacon small pieces
  • 2 tablespoons brown sugar
  • 2 cloves garlic minced
  • 12 ounces spaghetti
  • 0 water heavily salted
  • 1 cup peas cooked
  • 0 salt

Instructions

  1. In a bowl, whisk together whole eggs, egg yolks, grated Parmesan cheese, and black pepper until smooth.
  2. Chop beef bacon into small pieces.
  3. In a pan, cook beef bacon over medium heat with a bit of brown sugar until crispy.
  4. Add minced garlic to the pan and sauté until fragrant.
  5. Cook spaghetti in heavily salted boiling water. Reserve some pasta water before draining.
  6. Temper egg mixture by slowly adding reserved pasta water while whisking.
  7. Add the tempered egg mixture back to the pan with beef bacon and garlic.
  8. Add cooked spaghetti, cooked peas, and more pasta water to create a creamy sauce.
  9. Season with salt to taste and serve immediately.
