Beef Bacon Carbonara with Peas
A unique twist on the classic carbonara, replacing traditional pork with beef bacon and adding a fresh touch of peas for extra flavor and texture.

Ingredients
- 2 eggs whole
- 2 egg yolks
- 1 cup Parmesan cheese grated
- 0.5 teaspoon black pepper freshly ground
- 0.5 pound beef bacon small pieces
- 2 tablespoons brown sugar
- 2 cloves garlic minced
- 12 ounces spaghetti
- 0 water heavily salted
- 1 cup peas cooked
- 0 salt
Instructions
- In a bowl, whisk together whole eggs, egg yolks, grated Parmesan cheese, and black pepper until smooth.
- Chop beef bacon into small pieces.
- In a pan, cook beef bacon over medium heat with a bit of brown sugar until crispy.
- Add minced garlic to the pan and sauté until fragrant.
- Cook spaghetti in heavily salted boiling water. Reserve some pasta water before draining.
- Temper egg mixture by slowly adding reserved pasta water while whisking.
- Add the tempered egg mixture back to the pan with beef bacon and garlic.
- Add cooked spaghetti, cooked peas, and more pasta water to create a creamy sauce.
- Season with salt to taste and serve immediately.
