Warm Broccoli Caesar

Ingredients

  • 1.5 heads broccoli cut into florets
  • 2 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 6 slices bacon
  • 2 whole shallots sliced
  • 0.5 lb shaved Brussels sprouts
  • 0.25 cup tahini
  • 2 tbsp fresh lemon juice
  • 1 clove garlic minced
  • 1 tsp anchovy paste
  • 3 tbsp olive oil
  • 0.5 tsp salt
  • 0 fresh black pepper to taste
  • 0.25 cup water
  • 0.5 cup breadcrumbs
  • 0 parmesan cheese freshly grated

Instructions

  1. Preheat oven to 425°F. Add broccoli florets to a sheet pan and toss in olive oil, salt, and pepper.
  2. Add chopped bacon and shallots to one side of the sheet pan.
  3. Roast in oven for 25-30 minutes until broccoli is fork-tender.
  4. Toss shredded Brussels sprouts in a bowl with olive oil. With 8-10 minutes remaining on the roasting time, sprinkle them over the broccoli.
  5. Meanwhile, prepare the dressing by whisking tahini, lemon juice, garlic, anchovy paste, salt, and pepper in a bowl. Gradually whisk in olive oil until smooth, then add water to reach desired consistency.
  6. Remove the roasted vegetables from the oven. If desired, add breadcrumbs to the pan, coat in residual bacon grease, and toast for 4-5 minutes.
  7. Toss the roasted vegetables with the tahini Caesar dressing, serve warm topped with toasted breadcrumbs and freshly grated Parmesan cheese.
