Warm Broccoli Caesar
A cozy, warm salad with roasted broccoli, shaved Brussels sprouts, crispy bacon, and a delightful tahini Caesar dressing. Perfect for the chilly months.

Ingredients
- 1.5 heads broccoli cut into florets
- 2 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp black pepper
- 6 slices bacon
- 2 whole shallots sliced
- 0.5 lb shaved Brussels sprouts
- 0.25 cup tahini
- 2 tbsp fresh lemon juice
- 1 clove garlic minced
- 1 tsp anchovy paste
- 3 tbsp olive oil
- 0.5 tsp salt
- 0 fresh black pepper to taste
- 0.25 cup water
- 0.5 cup breadcrumbs
- 0 parmesan cheese freshly grated
Instructions
- Preheat oven to 425°F. Add broccoli florets to a sheet pan and toss in olive oil, salt, and pepper.
- Add chopped bacon and shallots to one side of the sheet pan.
- Roast in oven for 25-30 minutes until broccoli is fork-tender.
- Toss shredded Brussels sprouts in a bowl with olive oil. With 8-10 minutes remaining on the roasting time, sprinkle them over the broccoli.
- Meanwhile, prepare the dressing by whisking tahini, lemon juice, garlic, anchovy paste, salt, and pepper in a bowl. Gradually whisk in olive oil until smooth, then add water to reach desired consistency.
- Remove the roasted vegetables from the oven. If desired, add breadcrumbs to the pan, coat in residual bacon grease, and toast for 4-5 minutes.
- Toss the roasted vegetables with the tahini Caesar dressing, serve warm topped with toasted breadcrumbs and freshly grated Parmesan cheese.
