Shepherd's Pie

Ingredients
- 1 pound ground beef
- 0 salt

- 1 large onion chopped
- 2 medium carrot grated
- 2 cloves garlic minced
- 2 tablespoons tomato paste
- 2 tablespoons flour
- 2 tablespoons soy sauce
- 2 tablespoons ketchup
- 1 tablespoon white vinegar
- 1 cup water
- 1 teaspoon rosemary
- 1 teaspoon thyme
- 0.5 teaspoon allspice ground
- 1 cup peas frozen
- 2 pounds potatoes
- 0.5 cup butter melted
- 0.5 cup heavy cream
- 0.5 cup pecorino romano
- 1 teaspoon dried parsley
- 1 teaspoon garlic powder
- 2 egg yolks
- 0.25 cup pecorino romano
- 0 black pepper
Instructions
- Brown ground beef in a pan over medium heat. Season with salt and pepper and break it into small pieces.
- Add chopped onions, grated carrots, and minced garlic to the pan. Cook until onions are translucent.
- Stir in tomato paste, flour, soy sauce, ketchup, and white vinegar. Cook for 2 minutes.
- Pour in water, add rosemary, thyme, and allspice. Simmer covered on medium heat for 10 minutes.
- Add frozen peas and cook for an additional 5 minutes.
- Boil potatoes until knife-tender. Drain and mash them until smooth.
- Incorporate melted butter, heavy cream, pecorino romano, dried parsley, garlic powder, and egg yolks into mashed potatoes. Whip until smooth.
- Assemble in a baking dish by layering the beef mixture on the bottom and piping or spreading the mashed potatoes on top. Use a fork to create pattern edges.
- Top with additional pecorino romano and black pepper to taste. Bake at 400°F (200°C) for about 20 minutes.
