Honey Butter Sweet Potato Cornbread

Ingredients
- 1 cup yellow cornmeal
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 0.5 teaspoon salt
- 1 cup sweet potatoes mashed
- 0.25 cup honey
- 2 large eggs
- 0.5 cup butter melted
- 1 cup buttermilk
- 0.25 cup honey
- 0.5 cup butter softened
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, mix 1 cup of yellow cornmeal, 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
- In another bowl, combine 1 cup of mashed sweet potatoes, 1/4 cup of honey, 2 large eggs, 1/2 cup of melted butter, and 1 cup of buttermilk.
- Mix the wet and dry ingredients until combined. Do not overmix.
- Pour the batter into a greased 20x20 cm baking pan and bake for 25-30 minutes until golden brown and a toothpick inserted into the center comes out clean.
- For the honey butter, combine 1/4 cup of honey and 1/2 cup of softened butter in a small bowl. Mix until smooth.
- Serve the cornbread warm with the honey butter spread.
