Mulled Wine Pear And Blackberry Pavlovas
A dreamy little dessert with whipped cream, poached pears, and pistachios.

Ingredients
- 6 medium egg whites
- 250 g caster sugar
- 1 tsp cornflour
- 0.5 tsp vanilla extract
- 1 tsp apple cider vinegar
- 1 bottle mulled wine
- 4 pears
- 1 tbsp cornflour
- 1 tbsp water
- 500 ml double/heavy whipping cream
- 0.5 tsp vanilla extract
- 1 punnet blackberries
- 2 handfuls pistachios
Instructions
- Pre-heat your oven to 100C/212F.
- Add your egg whites (be careful to remove all egg yolk) and caster sugar to a standing mixer and mix on high. Set a timer for 10 minutes. Scrape down the sides of your bowl about 5 minutes in.
- Once the meringue has formed firm peaks (keep mixing for another minute or so if 10 minutes isn’t enough) turn the mixer off.
- Add cornflour, vanilla extract, and apple cider vinegar. Mix again for 30 seconds until all combined.
- Place into a large piping bag and pipe on baking paper lined trays. It depends how big you make them but this could make around 18 mini pavlovas. Use a piping nozzle if you want swirls.
- Place in the oven for 50 minutes, then turn the oven off and leave them in there for another 10 minutes - don’t open the oven door. Then remove and leave to chill at room temp.
- Place your mulled wine into a saucepan on medium-high heat with peeled and quartered pears. Cook for around 10 minutes, until the pears are soft. Remove pears from the pan.
- Remove half of your wine liquid (enjoy a tipple) then add a cornflour slurry (1 tbsp corn flour whisked with 1 tbsp water). If you want to use all of the leftover liquid to make a mulled wine sauce to use for other things, use a slurry of 2 tbsp cornflour + 2 tbsp water. Continue mixing the wine on a medium-high heat until thickened to a sauce then remove from heat.
- Place cream and 1/2 tsp vanilla into an electric mix and whip until soft peaks.
- Layer the pavlova up with cream, pear, blackberry halves, chopped pistachios and some of your mulled wine sauce.
