Creamy French Onion Scalloped Potatoes

Ingredients

  • 0 butter or nonstick spray
  • 3 tbsp unsalted butter
  • 4 large yellow onions
  • 3 sprigs or 3/4 tsp fresh thyme or dried thyme
  • 0.75 tsp kosher salt
  • 0.25 cup white wine
  • 1.5 cups beef stock
  • 15 oz PHILADELPHIA Chive & Onion Cream Cheese Spread
  • 0.25 tsp black pepper
  • 3 lb Yukon gold potatoes
  • 0 caramelized onions
  • 0.75 cups shredded Gruyère or raclette cheese
  • 0 PHILADELPHIA sauce
  • 0.33 cup grated Parmesan cheese
  • 0 foil
  • 0 fresh thyme

Instructions

  1. Preheat oven to 400°F. Grease a 10x16-inch baking dish with butter or nonstick spray.
  2. Melt butter in a skillet over medium heat. Add onions, thyme, and salt. Cook for 25–30 minutes until deep golden and caramelized.
  3. Deglaze the skillet with white wine, if using, and remove thyme sprigs. Set the onions aside.
  4. In a medium saucepan, warm the beef stock and whisk in PHILADELPHIA Chive & Onion Cream Cheese Spread until smooth and fully melted. Season with black pepper.
  5. Layer half the potatoes in the baking dish.
  6. Top with half the caramelized onions, half the shredded cheese, and half the warm PHILADELPHIA sauce.
  7. Repeat with remaining potatoes, onions, cheese, and sauce. Sprinkle Parmesan on top.
  8. Cover the dish with foil and bake for 35–40 minutes.
  9. Uncover and bake for an additional 20–25 minutes, until golden, bubbling, and fork-tender.
  10. Let the dish rest for 10–15 minutes before slicing. Garnish with fresh thyme.
