Raspberry And White Chocolate Muffins
Raspberry and white chocolate muffins.. the perfect grab and go snack. They’re so easy to make and such a perfect way to use up ripe bananas.

Ingredients
- 2 pieces ripe bananas
- 2 pieces large eggs
- 0.33 cup maple syrup
- 0.25 cup olive oil
- 1 teaspoon vanilla extract
- 1 cup rolled oats
- 1 cup plain flour
- 2 teaspoons baking powder
- 125 grams fresh raspberries
- 0.5 cup white chocolate chips
Instructions
- Preheat the oven to 180 degrees Celsius. Prepare a muffin pan by greasing it or lining it with paper liners.
- Add 2 ripe bananas, mashed, to a mixing bowl.
- Add 2 large eggs to the mixing bowl with the mashed bananas.
- Add 1/3 cup of maple syrup to the mixing bowl.
- Add 1/4 cup of olive oil to the mixing bowl.
- Add 1 teaspoon of vanilla extract to the mixing bowl and mix until well combined.
- Add 1 cup of rolled oats, 1 cup of plain flour, and 2 teaspoons of baking powder to the same bowl. Mix until combined but try not to over mix.
- Fold in 125g of fresh raspberries and 1/2 cup of white chocolate chips into the mixture.
- Divide the mixture evenly among the prepared muffin pan. The recipe makes 10-12 muffins.
- Bake the muffins for 20-25 minutes at 180 degrees Celsius.
