Almond Joy Cookies

Ingredients

  • 1.125 cups all-purpose flour
  • 0.5 teaspoons baking soda
  • 0.5 cups salted butter
  • 0.333 cups brown sugar
  • 0.333 cups granulated sugar
  • 1 large egg
  • 1 teaspoons vanilla extract
  • 1.5 cups semi-sweet chocolate chips
  • 1 cups sweetened coconut flakes
  • 0.75 cups sliced almonds

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a small bowl, whisk together the all-purpose flour and baking soda.
  3. In a larger bowl, blend together the softened butter, brown sugar, and granulated sugar.
  4. Add the egg and vanilla extract to the butter and sugar mixture and blend again.
  5. Slowly add the dry flour mixture into the wet mixture and blend until combined.
  6. Add in the semi-sweet chocolate chips, sweetened coconut flakes, and sliced almonds. Mix together until evenly distributed.
  7. Roll the dough into balls using an ice cream scoop for uniform size and place them on a lined baking tray.
  8. Bake the cookies in the preheated oven for 9-11 minutes, until the edges start to turn golden. The centers will still look raw.
  9. Let the cookies rest for at least 10 minutes before serving.
  10. Enjoy the cookies. They can be stored at room temperature for up to 3 days, in the fridge for a week, or in the freezer for 2-3 months.
