Almond Joy Cookies

Ingredients
- 1.125 cups all-purpose flour
- 0.5 teaspoons baking soda
- 0.5 cups salted butter
- 0.333 cups brown sugar
- 0.333 cups granulated sugar
- 1 large egg
- 1 teaspoons vanilla extract
- 1.5 cups semi-sweet chocolate chips
- 1 cups sweetened coconut flakes
- 0.75 cups sliced almonds
Instructions
- Preheat the oven to 350°F (175°C).
- In a small bowl, whisk together the all-purpose flour and baking soda.
- In a larger bowl, blend together the softened butter, brown sugar, and granulated sugar.
- Add the egg and vanilla extract to the butter and sugar mixture and blend again.
- Slowly add the dry flour mixture into the wet mixture and blend until combined.
- Add in the semi-sweet chocolate chips, sweetened coconut flakes, and sliced almonds. Mix together until evenly distributed.
- Roll the dough into balls using an ice cream scoop for uniform size and place them on a lined baking tray.
- Bake the cookies in the preheated oven for 9-11 minutes, until the edges start to turn golden. The centers will still look raw.
- Let the cookies rest for at least 10 minutes before serving.
- Enjoy the cookies. They can be stored at room temperature for up to 3 days, in the fridge for a week, or in the freezer for 2-3 months.
