Spaghetti Carbonara

Spaghetti Carbonara

Ingredients

  • 4 liters water
  • 1 tablespoon salt
  • 400 grams spaghetti
  • 150 grams pancetta
  • 4 large eggs
  • 100 grams Parmesan cheese
  • 1 teaspoon black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the spaghetti to the boiling water and cook until al dente, about 8-10 minutes.
  3. While the pasta is cooking, heat a large skillet over medium heat and add the pancetta.
  4. Cook the pancetta until it is crispy, about 5 minutes. Remove from heat and set aside.
  5. In a bowl, whisk together the eggs and grated Parmesan cheese.
  6. Drain the spaghetti, reserving 1 cup of the pasta water.
  7. Add the hot spaghetti to the skillet with the pancetta.
  8. Pour the egg and cheese mixture over the pasta, stirring quickly to coat the pasta and create a creamy sauce.
  9. If the sauce is too thick, add some reserved pasta water to reach the desired consistency.
  10. Season with freshly ground black pepper and serve immediately.
