Chicken Shawarma Wrap

Ingredients

  • 2 lb boneless chicken breast/thighs
  • 1 tsp black pepper powder
  • 1 tsp garlic powder
  • 1 tbsp smoked paprika powder
  • 0.5 tsp turmeric powder
  • 1 tsp red chili powder
  • 1 to taste salt
  • 2 tbsp mayonnaise
  • 1 tbsp fresh garlic
  • 1 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 0.33 cup mayonnaise
  • 0.33 cup sour cream
  • 3 tbsp buttermilk
  • 2 tbsp ketchup
  • 2 tbsp hot sauce
  • 1 tsp freshly chopped parsley
  • 1 tsp lemon juice
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika powder
  • 1 to taste salt
  • 0.5 tsp black pepper
  • 1 unit large red onion
  • 1 tbsp fresh parsley
  • 1 tbsp sumac
  • 1 tsp lemon juice
  • 1 to taste salt
  • 3 tbsp clarified butter
  • 6 unit tortilla wraps
  • 1 to taste garlic sauce
  • 1 to taste sumac onions
  • 1 to taste cooked chicken
  • 0.5 cup chopped tomatoes
  • 0.5 cup chopped cucumbers
  • 0.5 cup pickled cucumbers
  • 1 to taste spiced French fries

Instructions

  1. In a mixing bowl, add 2 lb boneless chicken breast/thighs cut into thin slices. Season with salt, 1 tsp black pepper powder, 1 tsp garlic powder, 1 tbsp smoked paprika powder, 1/2 tsp turmeric powder, and 1 tsp red chili powder.
  2. Add 2 tbsp mayonnaise, 1 tbsp fresh garlic finely minced, 1 tbsp olive oil, and 1 tbsp fresh lemon juice to the chicken. Mix until well combined. Cover and let it marinate for at least 1 hour.
  3. Prepare the garlic sauce by mixing 1/3 cup mayonnaise, 1/3 cup sour cream, 3-4 tbsp buttermilk, 2 tbsp ketchup, 2 tbsp hot sauce, 1 tsp freshly chopped parsley, 1 tsp lemon juice, 1 tbsp garlic powder, 1 tbsp smoked paprika powder, salt, and 1/2 tsp black pepper in a bowl. Whisk until smooth and creamy.
  4. Make the sumac onions by mixing 1 large red onion thinly sliced and washed, 1 tbsp fresh parsley chopped, 1 tbsp sumac, 1 tsp lemon juice, and salt in a bowl.
  5. In a pan, heat 3 tbsp clarified butter over medium heat. Once melted, add the marinated chicken and cook in batches, ensuring not to overcrowd the pan.
  6. Cook the chicken for about 8-10 minutes, tossing occasionally, until the chicken is fully cooked through.
  7. Warm the tortilla wraps before assembling the shawarma.
  8. Assemble the wrap by adding garlic sauce, sumac onions, cooked chicken, 1/2 cup chopped tomatoes, 1/2 cup chopped cucumbers, 1/2 cup pickled cucumbers, and spiced French fries onto the warmed tortilla.
  9. Add more garlic sauce if desired, then close the wrap and serve.
