Loaded Potato Soup

Loaded Potato Soup

Ingredients

  • 16 oz beef bacon or bacon of choice, divided
  • 0.5 medium yellow onion diced
  • 0 kosher salt to taste
  • 2 cloves garlic minced
  • 0.25 cup unbleached all-purpose flour
  • 3 cups whole milk
  • 2 cups chicken stock prepared from Better Than Bouillon Roasted Chicken Base
  • 3 lbs russet potatoes peeled & chopped
  • 0.5 cup heavy cream
  • 8 oz sharp cheddar cheese grated, divided
  • 0 scallions to taste
  • 0 sour cream to taste

Instructions

  1. In a large pot, add bacon and cook for a couple of minutes on each side until crispy. Remove from the pot and set aside.
  2. Leave a couple of tablespoons of bacon grease in the pot. Add diced onions, sprinkle with a pinch of salt, and cook for about 5 minutes.
  3. Add minced garlic and cook for about another minute.
  4. Sprinkle in the flour and mix for about a minute.
  5. Slowly pour and mix in milk and chicken stock, stirring frequently. Bring to a boil.
  6. Add peeled and chopped potatoes. Mix in and reduce heat to medium-low. Simmer covered, leaving a slight opening, for about 20 minutes until fork-tender.
  7. Remove from heat. Pour and mix in heavy cream. Mash a little of the potatoes to help thicken the soup.
  8. Mix in half of the grated sharp cheddar cheese, chopped bacon, and sliced scallions. Serve warm.
