Loaded Potato Soup
Imagine your favorite loaded baked potato but in soup form - creamy, rich, and cozy loaded potato soup to keep you warm.

Ingredients
- 16 oz beef bacon or bacon of choice, divided
- 0.5 medium yellow onion diced
- 0 kosher salt to taste
- 2 cloves garlic minced
- 0.25 cup unbleached all-purpose flour
- 3 cups whole milk
- 2 cups chicken stock prepared from Better Than Bouillon Roasted Chicken Base
- 3 lbs russet potatoes peeled & chopped
- 0.5 cup heavy cream
- 8 oz sharp cheddar cheese grated, divided
- 0 scallions to taste
- 0 sour cream to taste
Instructions
- In a large pot, add bacon and cook for a couple of minutes on each side until crispy. Remove from the pot and set aside.
- Leave a couple of tablespoons of bacon grease in the pot. Add diced onions, sprinkle with a pinch of salt, and cook for about 5 minutes.
- Add minced garlic and cook for about another minute.
- Sprinkle in the flour and mix for about a minute.
- Slowly pour and mix in milk and chicken stock, stirring frequently. Bring to a boil.
- Add peeled and chopped potatoes. Mix in and reduce heat to medium-low. Simmer covered, leaving a slight opening, for about 20 minutes until fork-tender.
- Remove from heat. Pour and mix in heavy cream. Mash a little of the potatoes to help thicken the soup.
- Mix in half of the grated sharp cheddar cheese, chopped bacon, and sliced scallions. Serve warm.
