Ginger Garlic Chicken and Vegetable Stir Fry

Ginger Garlic Chicken and Vegetable Stir Fry

Ingredients

  • 3 tbsp Soy Sauce
  • 1 tbsp Oyster Sauce optional, for extra depth
  • 2 tbsp Honey
  • 1 tbsp Rice Vinegar
  • 1 tbsp Vegetable Oil
  • 1 lb Boneless, Skinless Chicken Breast
  • 1 tbsp Vegetable Oil
  • 2 cups Broccoli Florets
  • 1 whole Red Bell Pepper
  • 1 whole Carrot
  • 1 cup Snap Peas
  • 1 tbsp Vegetable Oil
  • 2 tbsp Fresh Ginger
  • 3 cloves Garlic
  • 1 tbsp Cornstarch
  • 2 tbsp Water
  • 2 whole Green Onions

Instructions

  1. In a small bowl, whisk together soy sauce, oyster sauce, honey, and rice vinegar. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken slices and cook for 4-5 minutes, stirring frequently, until cooked through. Remove from the pan and set aside.
  3. Add another tablespoon of oil to the skillet. Toss in broccoli, bell pepper, carrot, and snap peas. Stir-fry for 4-5 minutes, until the vegetables are crisp-tender. Remove and set aside.
  4. Add the remaining tablespoon of oil to the skillet. Add ginger and garlic, stirring for 30 seconds until fragrant.
  5. Return the chicken and vegetables to the skillet. Pour the sauce over the mixture and toss to coat. Add the cornstarch slurry and cook for 1-2 minutes until the sauce thickens and evenly coats everything.
  6. Sprinkle with sliced green onions and serve hot over steamed rice or noodles.
