Flourless Almond Cookies

Ingredients
- 1 sheet parchment paper or a silicone baking mat
- 2 cups almond flour
- 0.75 cups granulated sugar or coconut sugar for a healthier option
- 0.25 tsp salt
- 0.25 tsp baking powder
- 2 egg
- 1 tsp almond extract
- 24 whole almonds for topping
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- In a mixing bowl, combine almond flour, sugar, salt, and baking powder. Whisk until evenly mixed.
- Add eggs and almond extract to the dry ingredients. Stir until the mixture forms a sticky dough.
- Scoop tablespoon-sized portions of the dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
- Gently flatten each ball slightly with the palm of your hand. Press a whole almond into the center of each cookie.
- Bake for 10-12 minutes, or until the edges are lightly golden. The cookies will be soft when removed from the oven but will firm up as they cool.
- Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
