Lemon Pepper Chicken Salad

Ingredients
- 0.33 cup mayonnaise
- 2 tbsp olive oil
- 1 lemon zest and juice
- 1 tsp black pepper
- 0.25 tsp garlic powder
- 0.25 tsp salt
- 2 cups chicken cooked, shredded or diced
- 0.25 cup celery finely diced
- 0.25 cup red onion chopped
- 2 tbsp parsley chopped, or dill
- 0.25 cup toasted almonds or sunflower seeds
Instructions
- In a large mixing bowl, whisk together mayonnaise, olive oil, lemon zest, lemon juice, black pepper, garlic powder, and salt until smooth and creamy.
- Add the cooked chicken, celery, red onion, and parsley or dill to the bowl with the dressing. Stir until the ingredients are evenly coated.
- If using, gently fold in toasted almonds or sunflower seeds for extra crunch and flavor.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
- Serve as a filling for sandwiches or wraps, on a bed of greens, or with crackers as a light snack.
