Ingredients

  • 0.33 cup mayonnaise
  • 2 tbsp olive oil
  • 1 lemon zest and juice
  • 1 tsp black pepper
  • 0.25 tsp garlic powder
  • 0.25 tsp salt
  • 2 cups chicken cooked, shredded or diced
  • 0.25 cup celery finely diced
  • 0.25 cup red onion chopped
  • 2 tbsp parsley chopped, or dill
  • 0.25 cup toasted almonds or sunflower seeds

Instructions

  1. In a large mixing bowl, whisk together mayonnaise, olive oil, lemon zest, lemon juice, black pepper, garlic powder, and salt until smooth and creamy.
  2. Add the cooked chicken, celery, red onion, and parsley or dill to the bowl with the dressing. Stir until the ingredients are evenly coated.
  3. If using, gently fold in toasted almonds or sunflower seeds for extra crunch and flavor.
  4. Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve as a filling for sandwiches or wraps, on a bed of greens, or with crackers as a light snack.
