Crispy Gnocchi Ham & Leek Soup

Ingredients
- 14 oz gnocchi cook until golden and crispy
- 1 tbsp butter
- 2 tbsp butter
- 1 leek chopped
- 3 cloves garlic minced
- 1 carrot chopped
- 1 potato chopped
- 0.5 cup dry white wine for deglazing
- 4 cups chicken broth
- 0 fresh thyme to taste
- 1.5 cups chopped ham
- 1 cup heavy cream
- 0 salt to taste
- 0 black pepper to taste
- 0 fresh thyme for garnish
- 0 fresh dill for garnish
Instructions
- Melt 1 tablespoon of butter in a large pot over medium heat. Add the gnocchi and cook until golden and crispy, about 6-8 minutes. Remove from the pot and set aside.
- Add another 2 tablespoons of butter to the pot. Stir in the chopped leek, minced garlic, chopped carrot, and chopped potato. Cook until softened, about 5 minutes.
- Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow to simmer for 2 minutes.
- Add the chicken broth and bring the mixture to a simmer. Stir in fresh thyme and cook until the potato is tender, about 15 minutes.
- Mash some of the potatoes roughly with a fork to thicken the soup slightly. Stir in the chopped ham and heavy cream. Season to taste with salt and pepper.
- Serve the soup in bowls and top each serving with the reserved crispy gnocchi. Garnish with fresh thyme and dill. Enjoy!
