Crispy Gnocchi Ham & Leek Soup

Ingredients

  • 14 oz gnocchi cook until golden and crispy
  • 1 tbsp butter
  • 2 tbsp butter
  • 1 leek chopped
  • 3 cloves garlic minced
  • 1 carrot chopped
  • 1 potato chopped
  • 0.5 cup dry white wine for deglazing
  • 4 cups chicken broth
  • 0 fresh thyme to taste
  • 1.5 cups chopped ham
  • 1 cup heavy cream
  • 0 salt to taste
  • 0 black pepper to taste
  • 0 fresh thyme for garnish
  • 0 fresh dill for garnish

Instructions

  1. Melt 1 tablespoon of butter in a large pot over medium heat. Add the gnocchi and cook until golden and crispy, about 6-8 minutes. Remove from the pot and set aside.
  2. Add another 2 tablespoons of butter to the pot. Stir in the chopped leek, minced garlic, chopped carrot, and chopped potato. Cook until softened, about 5 minutes.
  3. Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Allow to simmer for 2 minutes.
  4. Add the chicken broth and bring the mixture to a simmer. Stir in fresh thyme and cook until the potato is tender, about 15 minutes.
  5. Mash some of the potatoes roughly with a fork to thicken the soup slightly. Stir in the chopped ham and heavy cream. Season to taste with salt and pepper.
  6. Serve the soup in bowls and top each serving with the reserved crispy gnocchi. Garnish with fresh thyme and dill. Enjoy!
