Sweet Potato Butter Swim Biscuits

Ingredients

  • 1 cup sweet potato
  • 1 teaspoon cinnamon
  • 0.25 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 2.5 cups all-purpose flour
  • 4 teaspoons sugar
  • 4 teaspoons baking powder
  • 1 teaspoon salt
  • 1.5 cups buttermilk
  • 0.5 stick butter

Instructions

  1. Preheat the oven to 450 degrees Fahrenheit.
  2. In a bowl, combine 1 cup of sweet potato with 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1 teaspoon of vanilla extract.
  3. In a separate bowl, mix together 2 and 1/2 cups of all-purpose flour, 4 teaspoons of sugar, 4 teaspoons of baking powder, and 1 teaspoon of salt.
  4. Add the sweet potato mixture to the dry ingredients and mix until combined.
  5. Gradually add 1 and 1/2 cups of buttermilk to the mixture, stirring until a dough forms.
  6. Pour 1/2 stick of melted butter into a baking dish.
  7. Place the dough into the baking dish on top of the melted butter.
  8. Spread the dough evenly in the baking dish.
  9. Bake in the preheated oven for about 30 minutes or until the top is golden brown.
  10. Remove from the oven and let cool slightly before serving.
