Sweet Potato Butter Swim Biscuits
Delicious sweet potato biscuits with a buttery finish.

Ingredients
- 1 cup sweet potato
- 1 teaspoon cinnamon
- 0.25 teaspoon nutmeg
- 1 teaspoon vanilla extract
- 2.5 cups all-purpose flour
- 4 teaspoons sugar
- 4 teaspoons baking powder
- 1 teaspoon salt
- 1.5 cups buttermilk
- 0.5 stick butter
Instructions
- Preheat the oven to 450 degrees Fahrenheit.
- In a bowl, combine 1 cup of sweet potato with 1 teaspoon of cinnamon, 1/4 teaspoon of nutmeg, and 1 teaspoon of vanilla extract.
- In a separate bowl, mix together 2 and 1/2 cups of all-purpose flour, 4 teaspoons of sugar, 4 teaspoons of baking powder, and 1 teaspoon of salt.
- Add the sweet potato mixture to the dry ingredients and mix until combined.
- Gradually add 1 and 1/2 cups of buttermilk to the mixture, stirring until a dough forms.
- Pour 1/2 stick of melted butter into a baking dish.
- Place the dough into the baking dish on top of the melted butter.
- Spread the dough evenly in the baking dish.
- Bake in the preheated oven for about 30 minutes or until the top is golden brown.
- Remove from the oven and let cool slightly before serving.
