One Pot Lemon Chicken Orzo With Spinach

Ingredients
- 4 pieces boneless skinless chicken thighs
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 tablespoon olive oil
- 1 medium yellow onion
- 3 cloves garlic cloves
- 1 cup orzo
- 1 medium lemon
- 2 cups chicken broth
- 0.25 cup heavy cream
- 0.25 cup grated parmesan
- 1 cup spinach
Instructions
- Season the chicken thighs with salt, pepper, garlic powder, and paprika.
- Heat olive oil in a large pot over medium-high heat.
- Add the chicken thighs to the pot and cook until browned on both sides, about 5-7 minutes per side. Remove the chicken from the pot and set aside.
- In the same pot, add the chopped yellow onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Stir in the orzo and cook for 1-2 minutes until lightly toasted.
- Add the lemon juice and chicken broth to the pot, scraping any browned bits from the bottom.
- Return the chicken thighs to the pot. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for 15 minutes or until the orzo is tender and the chicken is cooked through.
- Stir in the heavy cream and grated parmesan, mixing until well combined.
- Add the spinach and cook until wilted, about 2-3 minutes.
- Serve the lemon chicken orzo hot, garnished with additional parmesan if desired.
