White Chocolate Raspberry Blondies

Ingredients

  • 1.5 cups all-purpose flour
  • 1 tbsp cornstarch
  • 1 tsp salt
  • 0.5 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 large egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 cup frozen raspberries, lightly dusted with flour
  • 1 cup white chocolate chips or chunks

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
  2. In a large bowl, whisk together flour, cornstarch, and salt.
  3. In a separate bowl, whisk the melted butter and sugar until smooth.
  4. Whisk in the egg, egg yolk, and vanilla until glossy.
  5. Gradually pour the wet mixture into the dry ingredients, whisking just until combined and smooth.
  6. Toss frozen raspberries lightly in flour, then gently fold them into the batter along with the white chocolate.
  7. Spread batter evenly in the prepared pan.
  8. Bake for 25–30 minutes, until the edges are set and a toothpick inserted comes out with a few moist crumbs.
  9. Allow blondies to cool completely before slicing.
