White Chocolate Raspberry Blondies

Ingredients
- 1.5 cups all-purpose flour
- 1 tbsp cornstarch
- 1 tsp salt
- 0.5 cup unsalted butter, melted
- 1 cup granulated sugar
- 1 large egg
- 1 egg yolk
- 1 tsp vanilla extract
- 1 cup frozen raspberries, lightly dusted with flour
- 1 cup white chocolate chips or chunks
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper.
- In a large bowl, whisk together flour, cornstarch, and salt.
- In a separate bowl, whisk the melted butter and sugar until smooth.
- Whisk in the egg, egg yolk, and vanilla until glossy.
- Gradually pour the wet mixture into the dry ingredients, whisking just until combined and smooth.
- Toss frozen raspberries lightly in flour, then gently fold them into the batter along with the white chocolate.
- Spread batter evenly in the prepared pan.
- Bake for 25–30 minutes, until the edges are set and a toothpick inserted comes out with a few moist crumbs.
- Allow blondies to cool completely before slicing.
