One-Pan Creamy Tuscan Pasta with Sausage

Ingredients

  • 1 lb Hot Italian Sausage casings removed
  • 1 lb Hot Italian Sausage
  • 0.5 tbsp Sun-Dried Tomato Oil or to taste
  • 1 cup Yellow Onion diced
  • 1 tsp Red Pepper Flakes to taste
  • 1 tsp Italian Seasoning to taste
  • 6 cloves Garlic minced
  • 3 tbsp Tomato Paste
  • 0.5 cup Dry White Wine
  • 3 cups Beef Broth or 3.5 cups for more sauce
  • 1 cup Cream
  • 0.5 cup Sun-Dried Tomatoes to taste
  • 0 Salt to taste
  • 0 Black Pepper to taste
  • 1 lb Rigatoni Pasta
  • 1 lb Hot Italian Sausage
  • 2 cups Spinach two handfuls
  • 1 cup Parmesan Cheese freshly grated
  • 1 tbsp Butter optional

Instructions

  1. Remove casings from hot Italian sausage and break apart the sausage links into small pieces.
  2. Heat a dutch oven over medium heat and add the sausage in a single layer. Let it sit undisturbed for a few minutes until it lifts easily, then stir and continue cooking until browned.
  3. Reduce heat to medium/low. Add sun-dried tomato oil, diced onions, a pinch of salt, red pepper flakes, and Italian seasoning. Saute for a few minutes.
  4. Add minced garlic to the pot and stir, allowing it to cook for another 30 seconds.
  5. Add tomato paste to the center of the pot and let it cook for about 2 minutes before incorporating it with the onions and garlic.
  6. Pour in the white wine and simmer until reduced by half, approximately 3 minutes.
  7. Add beef broth, cream, and sun-dried tomatoes to the pot. Season with salt and pepper, then stir and bring to a simmer.
  8. Add uncooked rigatoni pasta to the pot, stir, cover, and simmer on low for 20 minutes, stirring occasionally to prevent sticking.
  9. Return the cooked sausage to the pot along with spinach, Parmesan cheese, and a knob of butter.
  10. Stir gently, taste for seasoning, and serve with extra Parmesan cheese if desired.
