One-Pan Creamy Tuscan Pasta with Sausage
A delicious and easy-to-make creamy Tuscan pasta dish featuring hot Italian sausage, sun-dried tomatoes, and fresh spinach, all cooked in a single pan!

Ingredients
- 1 lb Hot Italian Sausage casings removed
- 1 lb Hot Italian Sausage
- 0.5 tbsp Sun-Dried Tomato Oil or to taste
- 1 cup Yellow Onion diced
- 1 tsp Red Pepper Flakes to taste
- 1 tsp Italian Seasoning to taste
- 6 cloves Garlic minced
- 3 tbsp Tomato Paste
- 0.5 cup Dry White Wine
- 3 cups Beef Broth or 3.5 cups for more sauce
- 1 cup Cream
- 0.5 cup Sun-Dried Tomatoes to taste
- 0 Salt to taste
- 0 Black Pepper to taste
- 1 lb Rigatoni Pasta
- 1 lb Hot Italian Sausage
- 2 cups Spinach two handfuls
- 1 cup Parmesan Cheese freshly grated
- 1 tbsp Butter optional
Instructions
- Remove casings from hot Italian sausage and break apart the sausage links into small pieces.
- Heat a dutch oven over medium heat and add the sausage in a single layer. Let it sit undisturbed for a few minutes until it lifts easily, then stir and continue cooking until browned.
- Reduce heat to medium/low. Add sun-dried tomato oil, diced onions, a pinch of salt, red pepper flakes, and Italian seasoning. Saute for a few minutes.
- Add minced garlic to the pot and stir, allowing it to cook for another 30 seconds.
- Add tomato paste to the center of the pot and let it cook for about 2 minutes before incorporating it with the onions and garlic.
- Pour in the white wine and simmer until reduced by half, approximately 3 minutes.
- Add beef broth, cream, and sun-dried tomatoes to the pot. Season with salt and pepper, then stir and bring to a simmer.
- Add uncooked rigatoni pasta to the pot, stir, cover, and simmer on low for 20 minutes, stirring occasionally to prevent sticking.
- Return the cooked sausage to the pot along with spinach, Parmesan cheese, and a knob of butter.
- Stir gently, taste for seasoning, and serve with extra Parmesan cheese if desired.
