Ingredients
- 1 lb shredded chicken
- 2 cans corn
- 0.75 cup crumbled bacon
- 0.25 cup mayonnaise
- 0.25 cup hot sauce or salsa
- 8 oz mozzarella cheese, shredded
- 8 oz cream cheese
- 1 tbsp Tajin or taco seasoning
- 0.5 cup heavy cream or whole milk
- 0 grated Parmesan
- 0 chopped cilantro
- 0 diced white onion
- 0 tortilla chips
Instructions
- Preheat the smoker (or oven, or crockpot) to 275°F.
- Add the shredded chicken and drained corn to a pan. Mix to combine.
- Add the crumbled bacon.
- Add the mayonnaise and hot sauce.
- Sprinkle the shredded mozzarella cheese over the top, then add the block of cream cheese to the middle and season with Tajin.
- Pour the heavy cream (or milk) around the edge of the pan and place on the smoker.
- Let it smoke for 1 hour, or until the cream cheese just starts to melt then use a spoon to give it a good mix.
- Once it’s well-combined, place it back on the smoker for another 20-30 minutes until it’s golden brown and bubbly.
- Add the grated Parmesan, cilantro, and onion to the top and serve immediately alongside your favorite tortilla chips.
