Chicken Bacon Street Corn Dip

Ingredients

  • 1 lb shredded chicken
  • 2 cans corn
  • 0.75 cup crumbled bacon
  • 0.25 cup mayonnaise
  • 0.25 cup hot sauce or salsa
  • 8 oz mozzarella cheese, shredded
  • 8 oz cream cheese
  • 1 tbsp Tajin or taco seasoning
  • 0.5 cup heavy cream or whole milk
  • 0 grated Parmesan
  • 0 chopped cilantro
  • 0 diced white onion
  • 0 tortilla chips

Instructions

  1. Preheat the smoker (or oven, or crockpot) to 275°F.
  2. Add the shredded chicken and drained corn to a pan. Mix to combine.
  3. Add the crumbled bacon.
  4. Add the mayonnaise and hot sauce.
  5. Sprinkle the shredded mozzarella cheese over the top, then add the block of cream cheese to the middle and season with Tajin.
  6. Pour the heavy cream (or milk) around the edge of the pan and place on the smoker.
  7. Let it smoke for 1 hour, or until the cream cheese just starts to melt then use a spoon to give it a good mix.
  8. Once it’s well-combined, place it back on the smoker for another 20-30 minutes until it’s golden brown and bubbly.
  9. Add the grated Parmesan, cilantro, and onion to the top and serve immediately alongside your favorite tortilla chips.
