Greek Meatballs

Ingredients

  • 1 lb ground chicken
  • 0.33 cup panko breadcrumbs
  • 0.25 cup sun-dried tomatoes
  • 0.25 cup crumbled feta
  • 0.25 cup red onion
  • 0.25 cup mint
  • 2 cloves garlic
  • 1 egg
  • 2 tbsp milk
  • 0 salt
  • 0 pepper
  • 0 avocado oil
  • 2 Persian cucumbers
  • 5 oz plain Greek yogurt
  • 0.25 tsp garlic powder
  • 0.5 lemon lemon juice
  • 1 lemon lemon zest
  • 0.5 tsp extra virgin olive oil
  • 2 tbsp fresh dill
  • 0 salt
  • 0 pepper
  • 1.5 cups orzo
  • 0 chicken broth
  • 2 cups spinach
  • 1 tbsp olive oil
  • 0.5 lemon lemon juice
  • 0.5 cup crumbled feta

Instructions

  1. In a large bowl, combine ground chicken, panko breadcrumbs, sun-dried tomatoes, crumbled feta, finely diced red onion, chopped mint, minced garlic, egg, milk, salt, and pepper.
  2. Roll the mixture into 12-14 meatballs.
  3. Heat avocado oil in a pan over medium heat and pan sear the meatballs on both sides until golden.
  4. Transfer the meatballs to an oven preheated to 350 degrees Fahrenheit and bake for 12 minutes.
  5. In a bowl, combine shaved Persian cucumbers, plain Greek yogurt, garlic powder, lemon juice, lemon zest, extra virgin olive oil, fresh dill, salt, and pepper to make tzatziki.
  6. Cook 1.5 cups of orzo in chicken broth according to package instructions.
  7. Once the orzo is cooked, add spinach, olive oil, lemon juice, and crumbled feta to the orzo and stir to combine.
  8. Serve the orzo warm, topped with the cooked meatballs and tzatziki.
