Greek Meatballs
Delicious Greek-style meatballs served with tzatziki and orzo.

Ingredients
- 1 lb ground chicken
- 0.33 cup panko breadcrumbs
- 0.25 cup sun-dried tomatoes
- 0.25 cup crumbled feta
- 0.25 cup red onion
- 0.25 cup mint
- 2 cloves garlic
- 1 egg
- 2 tbsp milk
- 0 salt
- 0 pepper
- 0 avocado oil
- 2 Persian cucumbers
- 5 oz plain Greek yogurt
- 0.25 tsp garlic powder
- 0.5 lemon lemon juice
- 1 lemon lemon zest
- 0.5 tsp extra virgin olive oil
- 2 tbsp fresh dill
- 0 salt
- 0 pepper
- 1.5 cups orzo
- 0 chicken broth
- 2 cups spinach
- 1 tbsp olive oil
- 0.5 lemon lemon juice
- 0.5 cup crumbled feta
Instructions
- In a large bowl, combine ground chicken, panko breadcrumbs, sun-dried tomatoes, crumbled feta, finely diced red onion, chopped mint, minced garlic, egg, milk, salt, and pepper.
- Roll the mixture into 12-14 meatballs.
- Heat avocado oil in a pan over medium heat and pan sear the meatballs on both sides until golden.
- Transfer the meatballs to an oven preheated to 350 degrees Fahrenheit and bake for 12 minutes.
- In a bowl, combine shaved Persian cucumbers, plain Greek yogurt, garlic powder, lemon juice, lemon zest, extra virgin olive oil, fresh dill, salt, and pepper to make tzatziki.
- Cook 1.5 cups of orzo in chicken broth according to package instructions.
- Once the orzo is cooked, add spinach, olive oil, lemon juice, and crumbled feta to the orzo and stir to combine.
- Serve the orzo warm, topped with the cooked meatballs and tzatziki.
