Juicy Cilantro Feta Chicken Burgers
Juicy, flavorful, and easy to make chicken burgers perfect for a quick meal. Enjoy them on their own, in a bun, or on top of a salad.

Ingredients
- 1 to 2 small carrot
- 1 medium onion
- 0.75 cup cilantro
- 0.5 cup feta cheese
- 1 tbsp oil
- 1 splash water
- 1 lb ground chicken
- 1 egg
- 1 tbsp breadcrumbs
- 1 tsp coriander
- 1 tsp oregano
- 1 tsp garlic powder
- 0.25 tsp dried basil
- 1 to taste salt
- 1 to taste pepper
- 1 tbsp olive oil
Instructions
- Grate the carrot finely using the smallest holes on your grater. This helps it cook faster and blend better into the burgers.
- Finely grate the onion until it becomes a juicy, almost purée-like consistency.
- Finely chop the cilantro and crumble the feta cheese.
- Sauté the grated carrots in a little oil for 2-3 minutes to soften and remove excess moisture.
- Alternatively, microwave the grated carrot for 60 seconds with a splash of water to soften quickly.
- In a bowl, combine all ingredients, including spices, and mix well. If the mixture seems too wet from the onion juice, add an extra tablespoon of breadcrumbs to help bind it. Let the mixture rest for 10-15 minutes to allow flavors to develop.
- Preheat your oven to 400°F (200°C).
- Heat a non-stick pan over medium heat and add olive oil.
- Form the burger patties, wetting your hands helps prevent sticking. Flatten them slightly.
- Cook the patties for 4 minutes per side. If they brown too quickly, reduce the heat slightly.
- Transfer the patties to a baking dish and bake for 4 more minutes, or until the internal temperature reaches 165°F.
