Cajun Shrimp Fried Rice
This Cajun shrimp fried rice is a quick and easy delight, packed with vibrant vegetables including a blend of bell pepper, onion, and garlic.

Ingredients
- 1 lb medium shrimp peeled, deveined
- 2 Tbsp Cajun seasoning divided
- 1 red or green bell pepper ribs and seeds removed, coarsely chopped
- 1 onion coarsely chopped
- 6 garlic cloves coarsely chopped
- 0.5 cup vegetable oil
- 0 pepper mixture
- 2 Tbsp Cajun seasoning
- 0 pepper mixture
- 1 lb medium shrimp coated in Cajun seasoning
- 5 cups cooked rice
- 0 kosher salt
- 0 cilantro leaves with tender stems
Instructions
- Toss 1 lb. medium shrimp, peeled and deveined, with 2 Tbsp. Cajun seasoning in a small bowl to combine.
- Pulse 1 medium red or green bell pepper, 1 medium onion, and 6 garlic cloves in a food processor until combined but still chunky.
- Heat 1/2 cup vegetable oil in a large nonstick skillet or wok over medium-high heat. Add the pepper mixture and remaining 2 Tbsp. Cajun seasoning.
- Cook, stirring often, until the pepper mixture is softened, about 4 minutes.
- Add shrimp and cook, stirring often, until opaque, about 5 minutes.
- Add 5 cups chilled cooked rice and stir to combine. Cook, stirring often, until rice is warmed through, about 4 minutes.
- Taste and season with kosher salt if needed.
- Divide fried rice among plates and top with cilantro leaves with tender stems.
