Sweet Potato Pie Puff Pastry Cups

Ingredients
- 2 large sweet potatoes
- 2 large sweet potatoes
- 0.5 tablespoon ground ginger
- 0.5 tablespoon ground nutmeg
- 1 tablespoon ground cinnamon
- 1 tablespoon molasses
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup milk
- 1 cup granulated sugar
- 1 cup brown sugar
- 1 sheet puff pastry
- 0 nonstick baking spray
Instructions
- Bring a large pot of water to a boil. Add the unpeeled sweet potatoes and boil for 1 hour, or until tender when pierced with a fork.
- Remove the sweet potatoes from the water. Let them cool slightly, then peel off the skins and place the flesh into a large bowl.
- Use a hand mixer to break down and blend the sweet potatoes until smooth. Add ginger, nutmeg, cinnamon, molasses, vanilla extract, eggs, and milk to the bowl. Mix with the hand mixer until everything is well combined.
- Add the granulated sugar and brown sugar. Use a large spoon or whisk to mix the filling by hand until everything is blended and smooth. Set aside.
- Preheat your oven to 350°F (175°C).
- Unfold the puff pastry sheet. Slice it down the middle lengthwise, then slice twice across the width to create six squares.
- Stretch each square slightly to fit into the wells of a sprayed muffin pan.
- Scoop some of the sweet potato pie filling into each puff pastry cup, filling them nearly to the top.
- Place the muffin pan in the oven and bake for 30 minutes.
