Breakfast Nachos
A delicious and easy-to-make breakfast version of nachos, perfect for a lazy Sunday breakfast or serving guests.

Ingredients
- 25 pieces corn tortillas
- 1 cup canola oil
- 25 pieces corn tortilla quarters
- 8 pieces eggs
- 0.33 cup milk
- 1 to taste salt
- 3 tablespoons butter
- 1 batch whisked eggs
- 0.5 bag crispy crowns or tater tots
- 12 oz breakfast sausage
- 16 oz cheddar cheese
- 1 to taste sour cream
- 1 to taste salsa
Instructions
- Cut about 25 corn tortillas into quarters.
- Heat 1 cup of canola oil in a frying pan.
- Fry the tortilla quarters in the hot oil until crispy and drain on paper towels.
- Spread the fried tortilla quarters out on a baking pan.
- Whisk 8 eggs with 1/3 cup of milk and salt to taste.
- Melt 3 tablespoons of butter in a skillet.
- Cook the whisked eggs in the skillet until just set.
- Spread the cooked eggs over the fried tortilla quarters on the baking pan.
- Top with 1/2 bag of crispy crowns or tater tots baked according to package instructions, then add 12 oz of cooked breakfast sausage.
- Top with 16 oz of grated cheddar cheese and bake at 375°F until the cheese is melted.
- Top with sour cream and salsa before serving.
