Red Velvet Cheesecake Brownies
Delicious red velvet cheesecake brownies with a rich, fudgy texture and a creamy cheesecake layer.

Ingredients
- 8 oz cream cheese
- 0.25 cup granulated sugar
- 1 tsp cornstarch
- 0.5 tsp vanilla extract
- 2 tbsp sour cream
- 1 large egg
- 1 cup unsalted butter
- 3 tbsp natural cocoa powder
- 3 tbsp olive oil
- 1 tsp vanilla extract
- 0.33 cup semi sweet chocolate, chopped
- 1 tsp vinegar
- 1.5 tsp gel red food coloring
- 3 large eggs
- 0.5 cup light brown sugar
- 1.75 cup powdered sugar
- 0.75 cup all purpose flour
- 0.75 cup semi sweet chocolate chips
Instructions
- Preheat oven to 350°F. Grease and line an 8x8 inch pan with parchment paper.
- In a mixing bowl, blend cream cheese, egg, vanilla extract, sour cream, cornstarch, and sugar until smooth using a blender.
- Brown butter in a saucepan over medium-low heat, stirring every 10 seconds. Once it turns golden brown, transfer to a heatproof bowl.
- Add cocoa powder, olive oil, vanilla extract, chopped chocolate, vinegar, and red food coloring to the browned butter. Mix and let the mixture cool at room temperature for 15-20 minutes.
- In another bowl, whisk eggs and light brown sugar for 4-6 minutes until dissolved and the mixture turns into a light pale color.
- Add powdered sugar to the egg mixture and mix until fully combined for 1-2 minutes.
- Combine the egg mixture with the browned butter mixture, mixing until combined.
- Add flour and chocolate chips to the batter. Mix until just combined, being careful not to overmix.
- Transfer half of the brownie mixture to the prepared pan. Reserve 30g / 2-3 tbsp of the cream cheese mixture; add the remaining mixture on top of the brownie layer.
- Top with the remaining brownie batter; add the reserved cream cheese mixture. Make swirls. Bake for 40-45 minutes or until the edges are golden and the center is slightly fudgy. Let cool completely before cutting.
