Creamy Sun-Dried Tomato Chicken Pasta

Ingredients
- 0 tablespoon oil from sun-dried tomatoes reserved from jar
- 1 pound chicken breasts
- 4 teaspoon Italian seasoning
- 1 teaspoon paprika
- 0.5 teaspoon chili flakes
- 2 tablespoon butter
- 1 medium shallot chopped
- 2 cloves garlic chopped
- 4 cups water
- 1 pound short cut pasta
- 1 cup heavy cream
- 2 teaspoon Dijon mustard
- 2 cups fresh baby spinach
- 8 ounce sun-dried tomatoes
- 1 whole lemon juice
- 0.75 cup grated parmesan cheese
Instructions
- Heat the oil from the sun-dried tomatoes in a large pot over medium-high heat.
- Season the chicken breasts with Italian seasoning, paprika, and chili flakes, then add to the pot.
- Cook the chicken until golden brown and cooked through, then remove it from the pot.
- Melt the butter in the same pot and add the chopped shallot and garlic, cooking until softened.
- Add water to the pot and bring to a boil.
- Add the pasta to the boiling water and cook until al dente.
- Reduce the heat and stir in the heavy cream, Dijon mustard, spinach, and sun-dried tomatoes.
- Stir in the lemon juice, grated parmesan, and return the chicken to the pot. Stir everything together.
- Serve the pasta warm, optionally alongside garlic bread.
