Orange Loaf Cake

Ingredients

  • 150 ml Milk
  • 0.5 lemon Lemon Juice
  • 150 g Caster Sugar
  • 2 tbsp Orange Zest
  • 1 tsp Vanilla Extract
  • 100 g Melted Butter
  • 50 ml Orange Juice
  • 250 g All Purpose Flour
  • 2 tsp Baking Powder
  • 150 g Powdered Sugar
  • 2 tbsp Orange Juice
  • 0.5 tbsp Lemon Juice
  • 1 optional Orange Zest

Instructions

  1. Mix the milk and lemon juice. Set aside for 5 minutes. It’ll curdle and that’s exactly what you want. This is your homemade buttermilk.
  2. In a large bowl, add the sugar and orange zest. Rub them together with your fingers until the sugar turns fragrant and slightly clumpy. This step matters the most to get that bright, orangey flavour.
  3. Whisk in the vanilla, butter and orange juice. Then add the buttermilk mixture and mix until smooth.
  4. Add the flour and baking powder. Fold gently just until you don’t see dry flour. Do not overmix please.
  5. Pour the batter into the prepared tin. Bake for 45–50 minutes, or until a skewer comes out clean.
  6. Let it cool at room temperature for a while.
  7. Make the glaze by mixing 150g powdered sugar, 2 tbsp orange juice, and 1/2 tbsp lemon juice. Mix well.
  8. Pour the glaze on the cooled cake. Let it set at room temperature, or refrigerate so the glaze can set before you slice the cake.
  9. Top the cake with some more orange zest if desired.
