Hawaiian Mac Salad

Hawaiian Mac Salad

Ingredients

  • 1 lb elbow macaroni
  • 2 tbsp apple cider vinegar
  • 2 shredded carrots
  • 1 shredded small sweet onion
  • 2 chopped green onion
  • 1 lb elbow macaroni

  • 2 cups mayo
  • 0.5 cup milk
  • 2 cups mayo
  • 0.5 cup milk
  • 0 to taste salt
  • 0 to taste pepper
  • 0 to taste sugar

Instructions

  1. Cook 1 lb of elbow macaroni according to the package instructions until al dente. Drain and set aside.
  2. While the macaroni is still hot, add 2 tablespoons of apple cider vinegar and toss to coat. Let it cool to room temperature.
  3. Shred 2 carrots and 1 small sweet onion. Chop 2 green onions finely.
  4. In a large bowl, combine the cooled macaroni, shredded carrots, shredded onion, and chopped green onions.
  5. In a separate bowl, mix 2 cups of mayo and 1/2 cup of milk until smooth.
  6. Pour the mayo mixture over the macaroni mixture and stir until everything is well coated.
  7. Season the salad with salt, pepper, and sugar to taste. Keep adding until the desired flavor is achieved.
  8. Cover the salad and refrigerate for at least 1 hour before serving to allow the flavors to meld.
  9. Before serving, give the salad a good stir and adjust seasoning if necessary.
  10. Serve chilled and enjoy your Hawaiian Mac Salad.
