Garlic-Coconut Shrimp and Green Beans
Every stir-fry needs a star to keep you coming back. In this speedy shrimp recipe, it’s a crispy coconut and garlic topping you’ll want to eat by the spoonful.

Ingredients
- 1 lb large shrimp peeled, deveined
- 1 tsp ground turmeric
- 2 tsp kosher salt Diamond Crystal or 1 tsp. Morton, divided
- 6 clove garlic cloves thinly sliced
- 0.25 cup extra-virgin olive oil
- 1 cup unsweetened coconut flakes
- 1 tsp sugar
- 1 lb green beans trimmed, cut into thirds
- 0.25 tsp crushed red pepper flakes
- 2 Tbsp unseasoned rice vinegar
- 3 Tbsp water
- 0.5 red onion thinly sliced
Instructions
- Pat large shrimp dry and place in a medium bowl. Sprinkle with turmeric and salt; toss to coat. Set aside.
- Cook sliced garlic and olive oil in a large skillet over medium heat until garlic is golden. Add coconut flakes and cook until golden.
- Drain coconut-garlic mixture in a sieve over a bowl; reserve skillet. Transfer mixture to a small bowl, add sugar and remaining salt; toss to coat.
- Heat reserved garlic oil over medium-high. Cook green beans, red pepper flakes, and shrimp until shrimp start to turn opaque.
- Add rice vinegar and water, cook until shrimp are cooked through and green beans are crisp-tender. Toss with red onion and coconut-garlic mixture.
