Garlic-Coconut Shrimp and Green Beans

Garlic-Coconut Shrimp and Green Beans

Ingredients

  • 1 lb large shrimp peeled, deveined
  • 1 tsp ground turmeric
  • 2 tsp kosher salt Diamond Crystal or 1 tsp. Morton, divided
  • 6 clove garlic cloves thinly sliced
  • 0.25 cup extra-virgin olive oil
  • 1 cup unsweetened coconut flakes
  • 1 tsp sugar
  • 1 lb green beans trimmed, cut into thirds
  • 0.25 tsp crushed red pepper flakes
  • 2 Tbsp unseasoned rice vinegar
  • 3 Tbsp water
  • 0.5 red onion thinly sliced

Instructions

  1. Pat large shrimp dry and place in a medium bowl. Sprinkle with turmeric and salt; toss to coat. Set aside.
  2. Cook sliced garlic and olive oil in a large skillet over medium heat until garlic is golden. Add coconut flakes and cook until golden.
  3. Drain coconut-garlic mixture in a sieve over a bowl; reserve skillet. Transfer mixture to a small bowl, add sugar and remaining salt; toss to coat.
  4. Heat reserved garlic oil over medium-high. Cook green beans, red pepper flakes, and shrimp until shrimp start to turn opaque.
  5. Add rice vinegar and water, cook until shrimp are cooked through and green beans are crisp-tender. Toss with red onion and coconut-garlic mixture.
