Chocolate Sesame Dumplings

Can you wrap just about any filling in dough and consider it a dumpling? These bite-size desserts prove you can. Lightly salted melted chocolate, creamy like a truffle, is stuffed into chewy homemade wrappers, naturally sweet from glutinous rice flour.

Chocolate Sesame Dumplings

Ingredients

  • 4 oz chocolate bittersweet or semisweet, broken into pieces or chips
  • 0.25 cup sweetened condensed milk
  • 1 tsp toasted sesame oil
  • 0.125 tsp coarse sea salt
  • 1.25 cups glutinous rice flour plus more for kneading
  • 1 tsp toasted sesame oil
  • 0 parchment paper

Instructions

  1. Put the chocolate in a large metal bowl and set over a medium saucepan with an inch of simmering water. Stir occasionally until two-thirds of the chocolate is melted. Take the bowl off the saucepan and gently stir until the rest is melted. Stir in the sweetened condensed milk, sesame oil, and salt until smooth.
  2. Ensure the filling is thick enough to scoop. Roll the mixture into 16 even balls. Set aside or refrigerate if your kitchen is warm.
  3. In a medium bowl, place the glutinous rice flour. Bring 1/2 cup water to a boil, stir in sesame oil and mix with flour until it resembles pebbles.
  4. When cool, squeeze and form the mixture into a shaggy ball. Cover with a damp towel and let rest for 5 to 10 minutes.
  5. Knead the dough on a floured surface until smooth and slightly tacky. Roll into a log and cut into 16 pieces.
  6. Flatten each piece into a 3-inch round, thinner at the edges. Place a chocolate ball in the center, pleat the dough around it, and pinch to seal.
  7. Line a steamer with parchment paper, heat the water to simmer, and place dumplings an inch apart. Steam for 6-8 minutes until the dough is tender and cooked through.
