Summer Salad With Grilled Corn & Green Goddess Dressing
A refreshing summer salad perfect for any season, featuring grilled corn and a creamy Green Goddess dressing.

Ingredients
- 2 ears corn
- 1 head romaine lettuce
- 1 cup grilled corn kernels
- 1 whole shallot
- 1 whole avocado
- 0.5 cup feta cheese
- 0.25 cup fresh basil leaves
- 0.25 cup fresh chives
- 0.25 cup fresh parsley
- 0.25 cup fresh cilantro
- 1 whole lemon
- 1 clove garlic
- 0.5 teaspoon salt
- 0.5 cup Greek yogurt
- 2 tablespoons olive oil
- 2 whole anchovy fillets
- 0.25 teaspoon black pepper
- 0.75 cup Green Goddess dressing
Instructions
- Grill the corn until charred and cooked through. Allow it to cool slightly, then slice the kernels off the cob.
- Wash and chop the romaine lettuce, then place it in a large bowl.
- Add the grilled corn kernels to the bowl with the chopped romaine.
- Thinly slice the shallot and add it to the bowl.
- Slice or cube the avocado and add it to the salad bowl.
- Add the crumbled feta cheese and torn or chopped fresh basil leaves to the salad.
- In a blender or food processor, combine fresh chives, parsley, cilantro, lemon juice, garlic, salt, Greek yogurt, and a splash of olive oil. Blend until smooth and creamy.
- Optionally, add 1-2 anchovy fillets and black pepper to the dressing mixture and blend again until fully incorporated.
- Drizzle the Green Goddess dressing over the salad.
- Toss the salad gently to combine all ingredients and serve fresh.
