Winter Citrus Salad

Ingredients
- 10 oz butter lettuce
- 1 cup rainbow slaw
- 15 oz mandarin oranges
- 1 whole honey crisp apple
- 0.5 pound cooked bacon
- 0.5 cup candied walnuts
- 0.5 cup dried cranberries
- 6 oz crumbled blue cheese
- 0 salt
- 0 pepper
- 0.5 cup olive oil
- 0.25 cup apple cider vinegar
- 2 tablespoons mandarin orange juice
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 0 salt
- 0 pepper
Instructions
- Prepare the salad base by placing the butter lettuce in a large salad bowl.
- Add the rainbow slaw to the salad bowl with the butter lettuce.
- Drain the mandarin oranges and add them to the salad.
- Slice the honey crisp apple and add the slices to the salad.
- Crumble the cooked bacon and sprinkle it over the salad.
- Add the candied walnuts to the salad for a sweet crunch.
- Sprinkle the dried cranberries over the salad.
- Top the salad with crumbled blue cheese.
- Season the salad with salt and pepper to taste.
- Prepare the dressing by whisking together olive oil, apple cider vinegar, mandarin orange juice, honey, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine all ingredients.
