Winter Citrus Salad

Ingredients

  • 10 oz butter lettuce
  • 1 cup rainbow slaw
  • 15 oz mandarin oranges
  • 1 whole honey crisp apple
  • 0.5 pound cooked bacon
  • 0.5 cup candied walnuts
  • 0.5 cup dried cranberries
  • 6 oz crumbled blue cheese
  • 0 salt
  • 0 pepper
  • 0.5 cup olive oil
  • 0.25 cup apple cider vinegar
  • 2 tablespoons mandarin orange juice
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 0 salt
  • 0 pepper

Instructions

  1. Prepare the salad base by placing the butter lettuce in a large salad bowl.
  2. Add the rainbow slaw to the salad bowl with the butter lettuce.
  3. Drain the mandarin oranges and add them to the salad.
  4. Slice the honey crisp apple and add the slices to the salad.
  5. Crumble the cooked bacon and sprinkle it over the salad.
  6. Add the candied walnuts to the salad for a sweet crunch.
  7. Sprinkle the dried cranberries over the salad.
  8. Top the salad with crumbled blue cheese.
  9. Season the salad with salt and pepper to taste.
  10. Prepare the dressing by whisking together olive oil, apple cider vinegar, mandarin orange juice, honey, Dijon mustard, salt, and pepper.
  11. Drizzle the dressing over the salad and toss gently to combine all ingredients.
