Banana Pudding Stuffed French Toast

Delicious Hawaiian rolls filled with banana pudding, dipped in Nilla wafers, and topped with strawberries for a sweet brunch treat.

Banana Pudding Stuffed French Toast

Ingredients

  • 2 cups milk
  • 0.5 cups sugar
  • 0.125 teaspoons salt
  • 4 egg yolks
  • 0.25 cups sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons butter
  • 2 bananas sliced
  • 1 bowl ice
  • 8 Hawaiian rolls cut with holes
  • 3 egg
  • 0.5 cups milk
  • 1 cup Nilla wafers crushed
  • 2 tablespoons butter for greasing
  • 1 bananas additional, sliced
  • 0.5 cup Nilla wafers additional, crushed
  • 0.25 cup strawberry syrup

Instructions

  1. Heat milk, sugar, and salt in a saucepan over medium heat until the sugar dissolves.
  2. Whisk together egg yolks and additional sugar until pale and thick, then slowly temper with the hot milk mixture.
  3. Add vanilla and butter to the egg mixture, and whisk until thickened.
  4. Stir in sliced bananas and cool over a bowl of ice.
  5. Transfer pudding to a piping bag, poke holes in Hawaiian rolls, and fill them with pudding.
  6. Prepare an egg mixture for the French toast dip.
  7. Dip filled rolls into the egg mixture, then coat them with crushed Nilla wafers.
  8. Cook each roll on a greased skillet until golden brown on all sides.
  9. Top with additional sliced bananas, Nilla wafers, and strawberry syrup.
