Fried Egg Quesadilla
This simple fried egg quesadilla makes as fine a light supper as it does a breakfast repast. Easy work with tortillas, cheese, ham or bacon, and a fried egg.

Ingredients
- 2 tablespoons butter
- 1 piece corn tortilla
- 0.5 cup Cheddar cheese grated
- 1 slice deli ham
- 2 tablespoons cilantro chopped
- 0 salsa
- 0 hot sauce
- 1 piece corn tortilla
- 1 egg
- 1 tablespoon butter
Instructions
- Melt some butter in a pan over medium heat.
- Gently cook one corn tortilla in the melted butter.
- Top the tortilla with grated Cheddar cheese and a slice of deli ham or some cooked bacon if desired.
- Add chopped cilantro or a drizzle of salsa or hot sauce on top of the cheese.
- Place another tortilla on top and cook, flipping the quesadilla a few times, until it is crisp and golden, and the cheese has melted.
- Use a spatula to transfer the quesadilla from the pan to a cutting board. Allow it to rest.
- In the same pan, fry an egg using a little more butter until the white is cooked but yolk remains runny.
- Cut the quesadilla into quarters and place the fried egg on top. Garnish with extra cilantro and hot sauce if desired.
