White Chicken Chili
A cozy white chicken chili recipe made with salsa verde, chicken, beans, and spices — perfect for weeknight dinners.

Ingredients
- 1 tbsp oil
- 1 medium onion
- 1 jalapeño
- 5 garlic cloves
- 4 cups chicken broth
- 12 oz salsa verde
- 2 15 oz cans great northern beans
- 2 tsp cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- 1 tsp onion powder
- 0.5 tsp oregano
- 0.5 tsp black pepper
- 0.5 tsp salt
- 2 lbs chicken breast
- 6 oz cream cheese
- 15 oz sweet corn
- 0.5 cup heavy whipping cream
- 2 tbsp cilantro
- 0.5 lime
- 0 shredded cheese
- 0 cilantro
- 0 sour cream
- 0 crushed Fritos
- 0 sliced jalapeños
- 0 green onions
- 0 lime wedges
Instructions
- Heat 1 tbsp oil in a large pot. Add diced onion and diced jalapeño. Sauté for about 3 minutes.
- Add minced garlic and sauté for 30 seconds.
- Add chicken broth, salsa verde, both cans of beans, and all seasonings (cumin, chili powder, garlic powder, onion powder, oregano, black pepper, and salt). Stir to combine.
- Add the chicken breast, bring to a simmer, and cook for 20–25 minutes or until the chicken shreds easily.
- Remove the chicken, shred it, and set aside.
- Lower the heat to low and add the softened cream cheese. Whisk until completely melted and smooth.
- Add the drained corn, shredded chicken, and heavy whipping cream. Simmer on low for about 5 minutes.
- Turn off the heat and stir in the chopped cilantro and lime juice. Season to taste.
- Serve with your favorite topping. Enjoy!
