White Chicken Chili

White Chicken Chili

Ingredients

  • 1 tbsp oil
  • 1 medium onion
  • 1 jalapeño
  • 5 garlic cloves
  • 4 cups chicken broth
  • 12 oz salsa verde
  • 2 15 oz cans great northern beans
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp oregano
  • 0.5 tsp black pepper
  • 0.5 tsp salt
  • 2 lbs chicken breast
  • 6 oz cream cheese
  • 15 oz sweet corn
  • 0.5 cup heavy whipping cream
  • 2 tbsp cilantro
  • 0.5 lime
  • 0 shredded cheese
  • 0 cilantro
  • 0 sour cream
  • 0 crushed Fritos
  • 0 sliced jalapeños
  • 0 green onions
  • 0 lime wedges

Instructions

  1. Heat 1 tbsp oil in a large pot. Add diced onion and diced jalapeño. Sauté for about 3 minutes.
  2. Add minced garlic and sauté for 30 seconds.
  3. Add chicken broth, salsa verde, both cans of beans, and all seasonings (cumin, chili powder, garlic powder, onion powder, oregano, black pepper, and salt). Stir to combine.
  4. Add the chicken breast, bring to a simmer, and cook for 20–25 minutes or until the chicken shreds easily.
  5. Remove the chicken, shred it, and set aside.
  6. Lower the heat to low and add the softened cream cheese. Whisk until completely melted and smooth.
  7. Add the drained corn, shredded chicken, and heavy whipping cream. Simmer on low for about 5 minutes.
  8. Turn off the heat and stir in the chopped cilantro and lime juice. Season to taste.
  9. Serve with your favorite topping. Enjoy!
