Dump & Bake Creamy Pesto Shrimp Pasta

Ingredients

  • 1 lb pasta
  • 2 cups bone broth
  • 1 cup bone broth
  • 1 cup cottage cheese
  • 1 cup green peas
  • 6 oz pesto
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 cups grated Parmesan
  • 1 lb raw shrimp
  • 0 Parmesan
  • 0 fresh parsley

Instructions

  1. Preheat oven to 400 degrees Fahrenheit.
  2. In a 9x13-inch baking dish, add uncooked pasta and 2 cups of bone broth.
  3. Blend the remaining 1 cup of bone broth, cottage cheese, and green peas. Pour the mixture over the pasta.
  4. Add pesto and seasonings to the pasta and mix to combine. Sprinkle grated Parmesan over the top if desired. Cover with foil.
  5. Bake for 45-50 minutes, mixing halfway through. If pasta is still undercooked, cook an additional 5 minutes or until al dente.
  6. Add raw shrimp to the dish and cook uncovered for 7-10 minutes, or until the shrimp is cooked through.
  7. Stir to combine and serve.
  8. Garnish with Parmesan and fresh parsley.
