Crispy Rice Salmon Salad
A delicious and healthy salad featuring crispy rice, marinated salmon, and fresh vegetables.

Ingredients
- 0.125 cup coconut sugar
- 0.25 cup soy sauce
- 1 sliced fresh ginger
- 1 tsp sesame oil
- 1 tsp ground ginger
- 1 tsp garlic powder
- 0.5 tsp chili oil flakes
- 2 fillets salmon fillets
- 1 cup jasmine rice
- 0.5 cup cooked jasmine rice
- 1 tbsp sesame oil
- 1 cup soy sauce
- 3 tbsp Daughter Ginger Soy Secret Sauce
- 0.5 tsp chili oil flakes
- 0.5 cup cooked jasmine rice
- 1 to taste Daughter Ginger Soy Secret Sauce
- 1 bunch green onions
- 2 chopped cucumbers
- 1 sliced avocado
- 0.125 cup ginger dressing
- 0.125 cup soy sauce
- 1 tbsp sesame oil
- 2 tbsp Daughter Ginger Soy Secret Sauce
- 1 pack shelled edamame
- 1 to taste sriracha mayo
Instructions
- Combine coconut sugar, soy sauce, fresh ginger, sesame oil, ground ginger, garlic powder, and chili oil flakes to create the salmon marinade.
- Marinate the salmon fillets in the prepared marinade in the fridge for at least 1 hour.
- Cook the jasmine rice according to package instructions and divide it in half once cooked.
- For the crispy rice, place half of the cooked rice on a sheet pan. Add sesame oil, soy sauce, Daughter Ginger Soy Secret Sauce, and chili oil flakes. Mix well.
- Bake the rice at 400°F for about 40 minutes, stirring every 10 minutes, until deeply golden and crispy.
- Mix the remaining rice with a little Daughter Ginger Soy Secret Sauce and set aside.
- Air fry the marinated salmon at 425°F for 11 to 12 minutes until cooked through and slightly caramelized.
- Prepare the salad components by chopping green onions and cucumbers, and slicing the avocado.
- Whisk together ginger dressing, soy sauce, sesame oil, and Daughter Ginger Soy Secret Sauce for the dressing and shake well.
- Assemble bowls by starting with cucumbers, edamame, crispy rice, soft rice, green onions, and avocado. Pour dressing generously over the vegetables and rice. Top with salmon and finish with an extra drizzle of Daughter Ginger Soy Secret Sauce and sriracha mayo.
