Pan Fried Shrimp Quesadilla
Shrimp quesadilla is a truly easy meal for busy nights or casual weekends. Serve it up with a dollop of salsa, sour cream or fresh guacamole.

Ingredients
- 2 teaspoons canola oil
- 0.25 cup onion chopped
- 1 tablespoon jalapeno pepper finely chopped
- 0.5 pound shrimp uncooked, peeled, deveined, chopped
- 0.25 teaspoon ground cumin
- 0.125 teaspoon pepper
- 0.25 cup tomato chopped
- 1 teaspoon canola oil
- 2 flour tortillas 6 inches each
- 0.25 cup Mexican cheese blend shredded
Instructions
- Heat 2 teaspoons of canola oil in a large nonstick skillet over medium heat. Add chopped onion and jalapeno.
- Cook and stir until tender, about 3-5 minutes. Add shrimp, cumin, and pepper. Cook and stir until shrimp turn pink, 2-3 minutes.
- Transfer the shrimp mixture to a small bowl and stir in chopped tomato.
- Add 1 teaspoon canola oil to the skillet. Place 1 tortilla in the skillet and top with half the cheese, half the shrimp mixture, and another tortilla.
- Cook over medium heat until lightly browned, about 2-3 minutes on each side. Remove from skillet.
- Repeat with remaining oil, tortillas, cheese, and shrimp mixture. Cut into wedges.
