Pan Fried Shrimp Quesadilla

Shrimp quesadilla is a truly easy meal for busy nights or casual weekends. Serve it up with a dollop of salsa, sour cream or fresh guacamole.

Pan Fried Shrimp Quesadilla

Ingredients

  • 2 teaspoons canola oil
  • 0.25 cup onion chopped
  • 1 tablespoon jalapeno pepper finely chopped
  • 0.5 pound shrimp uncooked, peeled, deveined, chopped
  • 0.25 teaspoon ground cumin
  • 0.125 teaspoon pepper
  • 0.25 cup tomato chopped
  • 1 teaspoon canola oil
  • 2 flour tortillas 6 inches each
  • 0.25 cup Mexican cheese blend shredded

Instructions

  1. Heat 2 teaspoons of canola oil in a large nonstick skillet over medium heat. Add chopped onion and jalapeno.
  2. Cook and stir until tender, about 3-5 minutes. Add shrimp, cumin, and pepper. Cook and stir until shrimp turn pink, 2-3 minutes.
  3. Transfer the shrimp mixture to a small bowl and stir in chopped tomato.
  4. Add 1 teaspoon canola oil to the skillet. Place 1 tortilla in the skillet and top with half the cheese, half the shrimp mixture, and another tortilla.
  5. Cook over medium heat until lightly browned, about 2-3 minutes on each side. Remove from skillet.
  6. Repeat with remaining oil, tortillas, cheese, and shrimp mixture. Cut into wedges.
