Viral Kale Caesar Chicken Cutlet Sandwich

Ingredients
- 1 large onions thinly sliced
- 1 cup buttermilk
- 1 cup flour
- 0.25 tsp salt
- 1 cup vegetable oil enough for frying
- 2 pieces chicken breast
- 2 egg
- 1 cup breadcrumbs
- 0.5 cup flour
- 2 cups kale massaged with dressing
- 0.5 cup Caesar dressing
- 0.25 cup parsley chopped
- 0.25 cup pecorino romano grated
- 0.25 cup parmesan cheese grated
- 4 pieces sesame buns
- 0.5 cup additional parmesan cheese for topping
Instructions
- Thinly slice the onions and dredge them in buttermilk, then in flour with a pinch of salt.
- Fry the onions until golden and crispy, then set aside.
- Prepare the chicken breast by thinly slicing or pounding it.
- Set up a dredging station with eggs, flour, and breadcrumbs.
- Coat the chicken first in flour, then eggs, and finally breadcrumbs. Fry until golden and crispy.
- Mix kale with homemade Caesar dressing, parsley, pecorino romano, and parmesan.
- Toast sesame buns, then layer with fried onions, chicken cutlets, kale mixture, and more cheese.
