Fish Tacos with Mango Slaw

Ingredients
- 1 tbsp smoked paprika
- 2 tsp salt
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cayenne powder
- 0.5 tsp black pepper
- 0.5 tsp dried oregano
- 0.5 tsp dried thyme
- 0.5 each lime juice
- 0.5 each orange juice
- 4 tbsp olive oil
- 2 lb cod fillet
- 1 tbsp olive oil
- 1 each mango
- 0.5 each red onion
- 0.5 each red bell pepper
- 0.25 cup pickled jalapeño
- 4 tbsp cilantro
- 0.5 each lime juice
- 0 tsp salt
- 0.5 cup mayonnaise
- 0.5 cup sour cream
- 2 cloves garlic
- 0.25 cup cilantro
- 0.5 tsp paprika
- 0.5 tsp onion powder
- 0.5 tsp ground cumin
- 0.5 each lime juice
- 8 each tortillas
- 3 cups red cabbage
Instructions
- Mix smoked paprika, salt, onion powder, garlic powder, cayenne powder, black pepper, dried oregano, dried thyme, lime juice, orange juice, and olive oil in a small bowl.
- Pour the seasoning mixture over the cod and marinate for 30 minutes.
- For a pan sear option: Heat 1 tablespoon olive oil in a pan over medium-high heat, and sear the cod in batches for 4 minutes on each side.
- For an oven option: Preheat the oven to 400°F and bake the cod for 10 minutes.
- Prepare the mango salsa by mixing mango, red onion, red bell pepper, pickled jalapeño, cilantro, lime juice, and salt in a bowl.
- Combine mayonnaise, sour cream, garlic, cilantro, paprika, onion powder, ground cumin, and lime juice in a food processor or blender and blend until smooth to make the sauce.
- Assemble the tacos: place a portion of the seared or baked cod into each tortilla. Top with mango slaw and drizzle with prepared sauce.
