Obachan’s Persimmon Bread

Ingredients
- 0.5 cup unsalted butter
- 1 cup persimmon puree
- 0.5 cup unsalted butter
- 0.75 cup sugar
- 2 eggs
- 0.5 tsp vanilla extract
- 1 cup persimmon puree
- 150 grams all purpose flour
- 0.5 tsp salt
- 1.5 tsp baking soda
- 1 tbsp cinnamon
- 1.5 tbsp pumpkin spice
Instructions
- Preheat oven to 350°F and grease a loaf pan using some of the extra butter left on the sides of the butter’s wax paper.
- Scoop out the jammy insides from the persimmons and set aside.
- In a bowl, cream the room temperature butter and sugar until light and fluffy.
- In another small bowl, beat the eggs with vanilla extract.
- Slowly add in the egg mixture into the creamed butter and sugar, mixing gently.
- Gently mix in the persimmon puree into the batter.
- Sift in the flour, salt, baking soda, cinnamon, and pumpkin spice into the mixture.
- Pour the batter into the greased loaf pan.
- Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the loaf comes out clean.
