Obachan’s Persimmon Bread

Ingredients

  • 0.5 cup unsalted butter
  • 1 cup persimmon puree
  • 0.5 cup unsalted butter
  • 0.75 cup sugar
  • 2 eggs
  • 0.5 tsp vanilla extract
  • 1 cup persimmon puree
  • 150 grams all purpose flour
  • 0.5 tsp salt
  • 1.5 tsp baking soda
  • 1 tbsp cinnamon
  • 1.5 tbsp pumpkin spice

Instructions

  1. Preheat oven to 350°F and grease a loaf pan using some of the extra butter left on the sides of the butter’s wax paper.
  2. Scoop out the jammy insides from the persimmons and set aside.
  3. In a bowl, cream the room temperature butter and sugar until light and fluffy.
  4. In another small bowl, beat the eggs with vanilla extract.
  5. Slowly add in the egg mixture into the creamed butter and sugar, mixing gently.
  6. Gently mix in the persimmon puree into the batter.
  7. Sift in the flour, salt, baking soda, cinnamon, and pumpkin spice into the mixture.
  8. Pour the batter into the greased loaf pan.
  9. Bake in the preheated oven for 45-55 minutes or until a toothpick inserted into the loaf comes out clean.
