Beef Udon Stir Fry

Ingredients

  • 1.5 pounds sirloin steak
  • 0.5 tsp baking soda
  • 2 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 0.5 tsp pepper
  • 1 small/medium yellow onion
  • 3 cloves garlic cloves
  • 1 head baby bok choy
  • 1 bunch green onions
  • 28 oz fresh udon noodles
  • 0.25 cup soy sauce
  • 2 tbsp dark soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp oyster sauce
  • 2 tbsp rice vinegar
  • 2 tsp sesame oil
  • 0.5 tsp pepper
  • 2 tbsp neutral oil
  • 1.5 pounds marinated sirloin steak
  • 1 tbsp neutral oil
  • 1 small/medium yellow onion
  • 3 cloves garlic cloves
  • 0.67 cup shredded carrot
  • 1 head baby bok choy
  • 28 oz fresh udon noodles
  • 1 batch prepared sauce
  • 1.5 pounds cooked sirloin steak
  • 1 bunch green onions

Instructions

  1. Thinly slice the sirloin steak and set aside in a bowl.
  2. Add baking soda, soy sauce, oyster sauce, and pepper to the sliced steak and set aside while you chop the veggies.
  3. Chop the yellow onion, garlic, baby bok choy, and green onions as desired.
  4. Separate the fresh udon noodles according to the instructions on the packaging.
  5. Combine soy sauce, dark soy sauce, brown sugar, oyster sauce, rice vinegar, sesame oil, and pepper to make the sauce.
  6. Heat a couple of tablespoons of neutral oil in a large pan over medium-high heat.
  7. Add the marinated meat to the pan and let it sear for a few minutes, stir, and sear some more. Once cooked, remove and set aside.
  8. In the same pan over medium heat, add more oil and add the chopped onions. Cook for about 3 minutes until they are fairly stiff.
  9. Add the garlic to the pan, stir, then add the shredded carrots and bok choy. Cook for another few minutes.
  10. Add the separated udon noodles and prepared sauce to the pan. Stir well to combine.
  11. Add the cooked steak and green onions to the pan. Stir to combine and serve.
