Ingredients

  • 1 cup cashews
  • 2 tablespoons dark brown sugar
  • 0.5 teaspoon kosher salt
  • 0.25 teaspoon ground cayenne
  • 0.5 teaspoon smoked paprika
  • 1 pound red cabbage
  • 0.5 large fennel bulb
  • 3 regular scallions
  • 3 pieces mandarins
  • 0.25 cup fresh mint
  • 0.25 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon sumac
  • 0.5 teaspoon salt

Instructions

  1. Prepare the spiced cashews by combining cashews, dark brown sugar, kosher salt, ground cayenne, and smoked paprika in a bowl.
  2. Thinly slice or shred the red cabbage and place it in a large salad bowl.
  3. Halve and slice the fennel bulb thinly, then add it to the salad bowl with the cabbage.
  4. Thinly slice the scallions and add them to the salad bowl.
  5. Peel and segment the mandarins, then add them to the salad bowl.
  6. Chop fresh mint and add it to the salad bowl.
  7. Prepare the vinaigrette by combining olive oil, lemon juice, sumac, and salt in a small bowl.
  8. Pour the vinaigrette over the salad ingredients in the bowl.
  9. Toss the salad gently to combine all ingredients and coat with the vinaigrette.
