Croissant Smash Burgers
Delicious smash burgers served on croissants with caramelized onions and a special sauce.

Ingredients
- 1 cup mayonnaise
- 0.25 cup ketchup
- 0.25 cup caramelized onions
- 0.25 cup pickles
- 1 tablespoon yellow mustard
- 1 teaspoon distilled white vinegar or pepperoncini juice
- 1 teaspoon sugar
- 0.5 teaspoon salt
- 0.25 teaspoon black pepper
- 1 tablespoon olive oil
- 2 tablespoons butter
- 2 large white onions
- 1 teaspoon sugar
- 0.5 teaspoon salt
- 1.5 pounds ground beef
- 0 to taste salt
- 0 to taste black pepper
- 4 pieces croissants
- 0.25 cup unsalted butter
- 2 tablespoons parsley
- 1 teaspoon garlic powder
- 1 teaspoon garlic paste
- 0 to taste salt
- 4 pieces croissants
- 0 as needed oil
- 4 pieces beef patties
- 0 as needed yellow mustard
- 4 slices American cheese
- 0 as needed sauce
- 0 as needed iceberg lettuce
- 0 as needed tomato slices
- 0 as needed caramelized onions
Instructions
- Mix mayonnaise, ketchup, mustard, caramelized onions, pickles, vinegar, sugar, salt, and pepper in a bowl. Cover and refrigerate until ready to use.
- Heat a pan over low heat with olive oil and butter. Add diced onions, sugar, and salt. Cook for 15 to 20 minutes, stirring occasionally, until the onions are soft and golden. Set aside.
- Divide the ground beef into 4 equal portions. Roll each portion into a ball and flatten into thin patties that are wider than the croissants. Season generously with salt and pepper. Keep chilled until ready to cook.
- Slice the croissants in half. Brush the cut sides with garlic butter.
- Toast the cut sides of the croissants in a pan until golden brown. Remove from the pan and set aside.
- Heat a skillet or griddle over medium-high heat with a thin layer of oil. Cook the patties for 2 minutes until browned.
- Spread mustard on the cooked side of each patty, flip them over, add a slice of American cheese, and cook for an additional 1 to 2 minutes until the cheese is melted.
- Assemble the burgers by spreading the sauce on the bottom half of each croissant, then layering with a patty, lettuce, tomato slices, caramelized onions, and the top half of the croissant.
- Serve the croissant smash burgers hot.
