Toasted Orzo Chicken Soup

Ingredients

  • 1 cup orzo
  • 2 tbsp butter
  • 0.5 onion chopped
  • 1.5 stalks celery sliced
  • 2 cloves garlic sliced
  • 0 olive oil
  • 4 cups chicken stock
  • 3 cups water
  • 2 chicken breast
  • 1 cup orzo
  • 0 shredded chicken already cooked and shredded
  • 1 lemon juiced
  • 0 chives sliced for garnish
  • 0 chili oil to taste for drizzling

Instructions

  1. Toast the orzo in 2 tablespoons of butter over medium heat until golden brown. Set aside.
  2. In the same pot, sauté the chopped onion, sliced celery, and garlic in a drizzle of olive oil until fragrant.
  3. Add the chicken stock and water to the pot and bring to a gentle boil.
  4. Add the chicken breasts or thighs to the bubbling stock and cook until fully cooked. Shred the chicken once cooled slightly.
  5. Return the toasted orzo to the pot with the shredded chicken. Simmer for a few more minutes.
  6. Garnish with lemon juice, sliced chives, and a drizzle of Aunt Lily’s Chili Oil before serving.
