Toasted Orzo Chicken Soup
A comforting and heartwarming chicken soup with toasted orzo and a drizzle of Aunt Lily's Chili Oil for a kick of flavor. It comes together in just over 30 minutes, making it perfect for a cozy meal.

Ingredients
- 1 cup orzo
- 2 tbsp butter
- 0.5 onion chopped
- 1.5 stalks celery sliced
- 2 cloves garlic sliced
- 0 olive oil
- 4 cups chicken stock
- 3 cups water
- 2 chicken breast
- 1 cup orzo
- 0 shredded chicken already cooked and shredded
- 1 lemon juiced
- 0 chives sliced for garnish
- 0 chili oil to taste for drizzling
Instructions
- Toast the orzo in 2 tablespoons of butter over medium heat until golden brown. Set aside.
- In the same pot, sauté the chopped onion, sliced celery, and garlic in a drizzle of olive oil until fragrant.
- Add the chicken stock and water to the pot and bring to a gentle boil.
- Add the chicken breasts or thighs to the bubbling stock and cook until fully cooked. Shred the chicken once cooled slightly.
- Return the toasted orzo to the pot with the shredded chicken. Simmer for a few more minutes.
- Garnish with lemon juice, sliced chives, and a drizzle of Aunt Lily’s Chili Oil before serving.
