Butternut Squash Baked Feta Pasta
A fall-inspired twist on the classic viral baked feta pasta, featuring creamy butternut squash, earthy sage, and a touch of heat from hot honey.

Ingredients
- 5 cups butternut squash diced
- 0.25 cup olive oil
- 0 salt
- 0 red pepper flakes
- 8 oz feta cheese
- 1 lb pasta orzo suggested
- 10 sage leaves minced
- 3 garlic finely minced
- 1 tbsp hot honey
- 0 salt
- 0 black pepper
Instructions
- Preheat your oven to 400°F (200°C).
- Place 5 cups of butternut squash on a baking dish. Drizzle with 1/4 cup olive oil and season with 2 hefty pinches of salt and a pinch of red pepper flakes.
- Place a block of feta cheese, around 8 oz, in the center of the squash and drizzle with a bit more olive oil.
- Bake for 35 minutes in the oven until the squash is tender and feta is soft.
- Meanwhile, cook 1 lb of pasta such as orzo according to package instructions. Drain and set aside.
- Remove the baking dish from the oven and add 10 minced sage leaves and 3 finely minced garlic cloves to the dish. Stir everything together, breaking up the softened feta.
- Combine the cooked pasta with the squash and feta mixture. Add 1 tbsp of hot honey and mix well.
