  • 8 oz feta cheese
  • 1 lb pasta orzo suggested
  • 10 sage leaves minced
  • 3 garlic finely minced
  • 1 tbsp hot honey
  • 0 salt
  • 0 black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place 5 cups of butternut squash on a baking dish. Drizzle with 1/4 cup olive oil and season with 2 hefty pinches of salt and a pinch of red pepper flakes.
  3. Place a block of feta cheese, around 8 oz, in the center of the squash and drizzle with a bit more olive oil.
  4. Bake for 35 minutes in the oven until the squash is tender and feta is soft.
  5. Meanwhile, cook 1 lb of pasta such as orzo according to package instructions. Drain and set aside.
  6. Remove the baking dish from the oven and add 10 minced sage leaves and 3 finely minced garlic cloves to the dish. Stir everything together, breaking up the softened feta.
